Oven Roasted Artichokes

I feel like only 10% of the population has ever eaten an artichoke, and I don’t mean in Spin Art Dip. Have you ever seen an artichoke? I was super intimidated to try and cook one… let alone peel the leaves off one by one and eat it like a savage. Artichokes are one of the only vegetables Jon will eat- the technique is pretty interesting. Typically you would:

1. Boil the artichokes in a pot

2. Peel back the leaves

3. Drizzle with Salt and Olive Oil

4. Use the leaves as a spoon, eating the end

5. Eat the heart

Artichokes are definitely and acquired taste, I thought the smelled and tasted funky the first few times I tried them… don’t even talk to me about the heart. I can’t eat that, although Jon swears it’s the best part. I got the idea to roast them in the oven to try and make the leaves less soggy, experimenting with different boil times, bake times and ingredients. I think I finally found an artichoke recipe I really like- and its super simple.


Preheat the oven to 425 degrees F. Wash and boil artichokes in a pot for 30 minutes. Let cool and slice each artichoke in half vertically and stuff with one clove of garlic. Cover both sides of the artichokes with salt and olive oil and individually wrap in aluminum foil. Place each artichoke on a baking sheet, middle facing down and bake in the oven for 45 minuets.

When the artichokes are done, unwrap the foil and enjoy by peeling back each leaf until you get to the heart.
